Colorado Springs restauranteur transitions event venue to a culinary center

Mitch Yellen, owner of Altitude Hospitality Group, which includes Pinery North, 9633 Prominent Point, made a major announcement in late December about his plan for reimagining Pinery North after the sale of the building failed.

Yellen can be compared to the idiom “rise like a phoenix from the ashes.” He comes back stronger after a setback, like having that multi-million-dollar sale of a building fall flat.

“I wasn’t ready to throw in the towel,” he said. “When the sale fell through, I saw it as a sign. I really do believe in God’s inspiration, and I am no quitter; I’m a fighter. I really wanted to do something special, something elevated in this building.”

His epiphany resulted in a plan for a culinary center, which will be called The Homestead Collective. The first phase will open in March, with the building fully open by May. Here’s a look at what we can expect in phase one:

• Roost Coffee will return as a coffee shop using beans roasted on the premises. The Roost Coffee brand coffee beans will be for sale too.

• Dad’s Donuts will expand with a second location for the 109-layer confections.

• Campfire Pizza will feature Neapolitan-style pizza baked over a wood fire instead of a traditional pizza oven.

The second phase will include:

• The Mercantile will feature fresh bread, spices, homemade and handmade goods.

• Till, which had been the anchor of the original building when it opened eight years ago, will come back with its Napa-style, farm-to-table concept. Till Neighborhood Bistro will continue to operate downtown.

• A second Garden of the Gods Gourmet, a breakfast and lunch café, will share dining space with Till at The Homestead.

• Garden of the Gods Catering will also move to The Homestead Collective.

Yellen intends to attract patrons next winter with an outdoor skating rink and in the summer with volleyball and pickleball courts, which will be in the front of the building.

“I’m not doing this alone,” Yellen said. “I have a phenomenal team working with me; they are very special. And you need both: great food and great staff. I know it’s tough out there — many people didn’t recover fully from the pandemic. But I think people are ready for this.”

In addition to The Homestead Collective, Altitude Hospitality Group also includes Vine and Wheel, The Pinery on the Hill, Garden of the Gods Market and Café, Till Neighborhood Bistro, Garden of the Gods Events and Catering, Altitude Baking Company, Altitude Floral and Design, Trainwreck, and Taylor Fencing.
